Pat dry and slice beef into ½ inch strips against the grain.
Whisk honey, garlic, soy sauce, olive oil, pepper, and red pepper flakes; marinate strips 30 min–4 hrs.
Season grill pan; preheat to medium-high (400-425°F).
Remove steak from marinade, pat dry, season with spices.
Sear in grill pan 2-3 min per side until caramelized.
Rest under foil 5-10 minutes, serve with glaze.
