Italian Flourless Chocolate Torta
  1. Preheat oven to 350°F with a rack in the middle position.

  2. Grease a 9-inch springform pan and line the bottom with parchment paper.

  3. In a food processor, process the peanuts or almond flour until finely ground.

  4. In a large bowl, beat the eggs and sugar with an electric mixer on high speed until very thick and pale, about 5 minutes.

  5. In a medium saucepan, melt the chocolate and butter over low heat, stirring constantly, until smooth. Let cool slightly.

  6. Fold the chocolate mixture into the egg mixture until no white streaks remain.

  7. Fold in the ground peanuts or almond flour until just combined.

  8. Pour the batter into the prepared pan and bake until the center is set but still slightly soft, 25 to 30 minutes.

  9. Let cool in the pan for 30 minutes, then remove the ring and let cool completely on a wire rack, about 2 hours.
