In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt until well combined.
Add the olive oil, non-fat Greek yogurt, minced garlic, and chopped parsley to the dry ingredients. Use a wooden spoon or your hands to mix until a dough forms.
Turn the dough out onto a lightly floured surface and knead it gently for 1-2 minutes, or until smooth and elastic.
Divide the dough into 4 equal portions. Roll each portion into a ball and then use a rolling pin to flatten it into a circle, about ¼ inch thick.
Heat a non-stick skillet or griddle over medium-high heat. Lightly coat the skillet with cooking spray.
Cook the flatbreads in the skillet for 2-3 minutes on each side, or until golden brown and cooked through. Repeat with the remaining portions of dough.
Once cooked, transfer the flatbreads to a serving plate and keep them warm until ready to serve.
