Egg Hashbrown Casserole
  1. Preheat oven to 400 degrees F and prepare a greased 9x13 ceramic baking dish.

  2. In a sauté pan, heat olive oil over medium high heat. Brown your sausage until cooked through, about 10 minutes.

  3. Add in the onions, garlic, and peppers to the pot. Sauté for an additional 5 minutes.

  4. While the sausage and veggies cook, whisk together eggs and dried spices in a large bowl.

  5. Add the cooked sausage, veggies, thawed hash browns and cheddar cheese to the egg mixture.

  6. Pour into a greased 9x13 glass or ceramic baking dish.

  7. Bake uncovered at 400 degrees F for 25-30 minutes or until the eggs are completely set in the center.
