In a large pot over medium heat, add your oil, onion, shallot, sliced tomato, lemon zest and juice, tomato paste, and preferred protein, making sure everything is fully cooked (about 10-15 minutes)
Add your seasoning, spinach, and toss
Turn up the heat, pour in the wine if using and cook for 5-10 minutes until the alcohol simmers out
Add the broth and parmesan cheese rind, bring to a simmer or slight boil
Add in the pasta and cook to package instructions
While the pasta cooks, add in the cream and stir
When the pasta is ready, serve up a bowl, top with extra cheese, fresh herbs, and more red pepper flakes if desired
