Season the pork chops generously with salt and pepper.
Sear the pork chops in a hot pan until golden brown.
Melt butter in the pan and sauté the shallot and garlic.
Add the dry spices and toast them.
Add the mushroom and onion and sauté until softened.
Add the flour and a little bit of broth to create a gravy.
Add a splash of cream for extra richness.
Put the pork chops back in the pan and simmer until cooked through.
Serve over mashed potatoes.
