Mash or whip ½ cup cottage cheese with ¼ tsp fine salt and 1 pinch black pepper until smooth.
Toast 2 thick-cut sourdough slices until deeply golden and sturdy. Spread the seasoned cottage cheese thick on top and sprinkle with a pinch of 1 pinch crushed red pepper flakes, divided.
Heat a dry nonstick pan over medium heat. Scatter 3 oz halloumi, grated into a thin, even layer roughly the size of your toast. Let it sizzle undisturbed for 2-3 minutes until deeply golden and lacy-crisp, then carefully flip or lift with a spatula and cook 1 more minute.
Slide the crispy halloumi onto the toast. Arrange the 2 clementines, peeled and segmented segments and 2 fresh or dried figs, sliced slices over top.
Scatter 2 tbsp pistachios, crushed over the top, tuck in a few 1 dill sprigs, for garnish, and finish with a generous drizzle of 2 honey and the remaining chili flakes.
