In a bowl add ⅓ cup of mustard seeds into 1 cup water and ½ cup white vinegar and let it sit for 24 hrs.
Drain and rinse well after 24hrs.
Add all your listed ingredients except the honey/sweetener to either a high speed blender or food processor and blend till it's a smooth consistency.
Then add your mixture to a pot and simmer on low for 10 minutes or until it gets to the thickness of your choice.
Remove from heat and let it cool a bit then add your choice of sweetener I used organic honey.
Add it to an air sealed jar and refrigerate for a day or 2 before you enjoy.
As the days go by your mustard will mellow out and won't be as strong after a week it will loose the strength and be more similar to regular mustard.
This recipe can last up to 2 months in the refrigerator.
