High Protein Baked Potato
  1. Score the potatoes, spread the oil and salt on the potatoes, bake in the oven for 60 min at 200 degrees/convection oven

  2. Finely dice the vegetables and smoked tofu

  3. Remove the potatoes from the oven and scoop out the inside with a spoon

  4. Mix the potato mixture with the remaining filling ingredients and stuff into the hollowed-out potatoes

  5. Sprinkle with cheese and place in the oven at 200 degrees / fan oven for 20 minutes

  6. Enjoy with toppings
