Cabbage French Onion Soup - Corre (Coco) Larkin
  1. Begin by slicing the onions into half-moon shapes.

  2. In a pan, heat the oil and butter, then add the sliced onions and cook them until they are caramelized.

  3. Next, cut the cabbage into wedges while keeping the core intact, and sear the wedges in the same pan.

  4. Once the onions are caramelized and the cabbage is seared, transfer both to a baking dish.

  5. Pour the beef broth over the vegetables and sprinkle the tarragon leaves on top.

  6. Cover the dish with foil and place it in a preheated oven at 350°F for about 30 minutes.

  7. After 30 minutes, remove the foil and sprinkle the grated Conte, Parmesan, and mozzarella cheeses over the top.

  8. Increase the oven temperature to 425°F and bake uncovered for an additional 10 minutes, or until the cheese is bubbly and golden.

  9. Finally, garnish with a bit of parsley before serving.
