No-bake Coffee & Walnut Cake
  1. Soak the dates in the double espresso shot for 10 minutes.

  2. Blend dates, espresso shot, milk, rolled oats, vanilla and pinch of salt together.

  3. Transfer to a large bowl and fold in the chopped walnuts.

  4. Add the mixture to a parchment lined loaf tin.

  5. Press it down evenly with the back of a spoon.

  6. Chill in the fridge for 15 minutes.

  7. Blend the cashews with vanilla extract, maple syrup and milk until smooth.

  8. Mix with greek yoghurt.

  9. Spread the icing evenly on top of the walnut base and sprinkle with walnuts.

  10. Chill in the fridge for an hour before serving.

  11. If needed, soak the cashews for 10 minutes in hot water before
