Taiwanese Dan Bing
  1. Make the batter by whisking together the eggs, flour, water, and salt until smooth.

  2. Heat a non-stick pan over medium heat and pour in a small amount of the batter, just enough to cover the bottom of the pan in a thin layer.

  3. Cook for 1-2 minutes until the bottom is set, then flip and cook the other side for another 1-2 minutes.

  4. Repeat with the remaining batter, adding more as needed.

  5. Serve the dan bing warm, optionally with your favorite toppings or dipping sauces.
