Zest the lemons (organic would be best) and rub the zest into the sugar until fragrant.
Add the eggs and whisk well until light and slightly fluffy between 3-5 minutes.
Gradually pour in the olive oil, freshly squeezed lemon juice, and milk until smooth.
Add the flour, potato starch, baking powder, and a pinch of salt. Mix just until combined, avoid over mixing the batter.
Pour into a lined or greased 9 inch pan and bake at 350°F (180°C) for about 35 minutes, or until a toothpick comes out clean.
Let it cool slightly, decorate with powdered sugar before slicing. Enjoy!
