Super Soft Lemon Cake
  1. Zest the lemons (organic would be best) and rub the zest into the sugar until fragrant.

  2. Add the eggs and whisk well until light and slightly fluffy between 3-5 minutes.

  3. Gradually pour in the olive oil, freshly squeezed lemon juice, and milk until smooth.

  4. Add the flour, potato starch, baking powder, and a pinch of salt. Mix just until combined, avoid over mixing the batter.

  5. Pour into a lined or greased 9 inch pan and bake at 350°F (180°C) for about 35 minutes, or until a toothpick comes out clean.

  6. Let it cool slightly, decorate with powdered sugar before slicing. Enjoy!
