Preheat your oven to 375F. Then mix together the egg and sugars. Make sure to whisk them together really well, until the sugar is fully dissolved and the eggs turn a light pale color, about 5 minutes.
Add in the oil and mix again. Any neutral flavored oil will work.
Then add the flour and baking powder. Mix until no clump of flour remain.
In a separate bowl, mix together your chopped apples along with the sugar, cinnamon, and flour.
Cut some caramel candy into small pieces, then add these and the apples into the blondie mixture. Mix again until combined.
Pour the blondie mixture into a small grease and lined baking tray. Top with a few extra pieces of caramel candy.
Bake 28-30 min or until the top has set and a toothpick inserted in the middle comes out almost clean.
Let the blondies cool completely before cutting and serving.
