Roasted Cauliflower and Chickpea Bowls
  1. Prepare the quinoa (or other grain) as instructed and set aside.

  2. Preheat the oven to 400° F.

  3. Mix the cauliflower with 2 tbsp of olive oil and the seasonings (salt, turmeric, garlic powder).

  4. Drain the chickpeas and pat them dry.

  5. Mix the chickpeas with 1 tbsp of olive oil and the seasonings.

  6. Arrange the cauliflower and chickpeas on a sheet pan and bake for 20-30 minutes until tender and crispy.

  7. Serve over the quinoa with any desired toppings (hummus, cabbage, pickles, tzatziki, etc.)
