Prep: In a bowl, beat the eggs with salt and pepper.
Cook Veggies: Heat olive oil in a pan over medium heat. Sauté bell peppers and spinach for 2-3 minutes.
Make Omelet: Pour the eggs over the veggies and cook until the edges start to set. Place tomato slices on top.
Add Feta & Melt: Sprinkle feta over the omelet. Cover the pan for 1-2 minutes until the cheese melts.
Serve: Fold the omelet in half and enjoy!
