  1. Whisk orange juice, oil, salt and white pepper in a jug until well combined.

  2. Add orange rind. Set aside.

  3. Layer pear, avocado, smoked fish, snow pea tendrils and walnuts on serving plates.

  4. Drizzle dressing over salads and serve.
