Cheesy Mashed Potato Puffs
  1. Preheat your oven to 400°F (200°C). Grease a mini muffin pan with butter or nonstick spray.

  2. In a large bowl, combine the mashed potatoes, egg, cheddar, chives, flour, garlic powder, salt, and pepper. Mix until a soft dough forms.

  3. Scoop out 1 tablespoon of mixture, roll into a ball, and coat lightly in grated Parmesan.

  4. Place each ball in the muffin tin and gently press to fill the slot without flattening.

  5. Bake for 15–20 minutes, until golden and crisp on top. Do not overbake.

  6. Cool for 2–3 minutes, then remove from the tin and serve warm.
