Make an half-dough with half the water and flour. Let it rest for an hour.
Add the rest of the flour and water mixed with the yeast, knead by hand or by machine.
Let it rest for some time.
Gently add the remaining ingredients and place it in a container 3 times the size of the dough.
Wait half an hour then place it in the fridge for 12-16 hours.
Take it out of the fridge 3 hours before making the pizza and form the dough balls.
Heat the oven to about 350°/400° C.
