Add the shredded cheese to a cold 8" skillet. Then turn the heat to medium and melt for about 3 minutes until the edges are getting crispy and golden brown.
Pour the egg whites over the crispy cheese. Cover with a lid and cook for about 2 minutes until the whites are just set.
While the egg whites are setting, heat a medium size skillet over medium heat. Melt the butter, then cook the spinach for 30 seconds, tossing constantly, until starting to wilt. Transfer to a plate.
After the egg whites are set, pour over the egg yolks and cover to warm them for just 30 seconds.
Transfer the cooked crispy cheese bottom sunny side up eggs over the wilted spinach. Top with desired amount of Everything But The Bagel seasoning and some bacon (optional). Enjoy!
