  1. Cut the chicken into bite-sized pieces and season with the listed ingredients. Marinate for at least 1 hour or overnight for more flavor.

  2. In a small bowl, combine all the seasoning mix ingredients and set aside.

  3. Add the sweet potato starch and baking powder to a shallow bowl and toss the chicken pieces in the mixture, coating them evenly.

  4. Fry the chicken in small batches at 350°F for about 3-4 minutes or until lightly brown. Repeat with the remaining chicken.

  5. Double fry the chicken until crispy and golden brown.

  6. Add fresh basil for 30 seconds.

  7. Sprinkle the seasoning mix over the chicken and toss the fried basil on top. Enjoy!
