  1. Preheat the oven to 425°F and line a rimmed sheet pan with parchment paper or foil.

  2. Scrub and dry the potatoes, pierce each one several times, rub with olive oil, and season with ½ teaspoon kosher salt.

  3. Bake for 50 to 65 minutes, turning once, until a thin knife slides easily through the centers.

  4. Cook the ground beef and diced onion in a large skillet over medium heat for 7 to 9 minutes, breaking the meat into small pieces.

  5. Spoon out excess grease when the skillet contains more than about 1 tablespoon.
