  1. Rinse the soybeans.

  2. Soak the soybeans overnight.

  3. Check the beans for softness.

  4. Drain the soybeans.

  5. Roll the soybeans between your fingers to remove skins.

  6. Use a spoon to skim out the skins.

  7. Place the beans and four cups of water into the blender.

  8. Run the blender on high for one minute.

  9. Set up the strainer with cheesecloth over a pot.

  10. Strain the soy milk into the pot.

  11. Set aside the soy paste (okara).

  12. Put the pot of soy milk over medium-low heat.

  13. Bring to a boil and add salt and flavorings.

  14. Simmer for 20 minutes.

  15. Let the soy milk cool.

  16. Scoop off any film on the top.

  17. Serve the soy milk cold.
