  1. In a pan over medium heat, add 2 tbsp oil and the tofu cubes. season with ½ tsp salt and black pepper to taste. Sear until browned on all sides, about 4-5 mins.

  2. While tofu is searing, combine soy sauce, tomato paste, date syrup, lemon juice, garam masala, turmeric, and cumin in a small bowl and whisk together.

  3. Add the red bell pepper, shallot, garlic, and ginger. cook down 2 mins. Add the sauce and cook down another 2-3 mins pour in coconut milk and cook down 2-3 mins.

  4. Serve over rice with with scallion, cilantro, and sesame seeds. Enjoy!
