Preheat oven to 350.
Place squash halves on sheet pan and brush cut edges with olive oil. Put ½ of the Boursin in each cavity, and half of the tomatoes. Roast until the squash is tender, about 30 - 45 minutes.
Meanwhile, sautéed shallots in olive oil until beginning to soften, then add garlic and cook until beginning to soften. Add sausage and cook until done.
Remove squash from oven when browned and cooked through. Stir the squash with the cheese and tomatoes until mixed throughout. Top with spinach mix, then sprinkle with parmigiano and cracked pepper.
