    Directions:

  1. Prepare the Noodles: Cook the noodles according to package instructions. Drain and rinse under cold water to stop the cooking process. Toss with sesame oil to prevent sticking.

  2. Make the Peanut Butter Sauce: In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, chili-garlic sauce, sesame oil, honey, lime juice, garlic, ginger, and water or stock until smooth. Adjust the consistency with more water or stock if needed.

  3. Combine Noodles and Sauce: In a large bowl, add the cooked noodles and pour the peanut butter sauce over them. Toss until the noodles are well coated in the sauce.

  4. Serve and Garnish: Divide the noodles into serving bowls. Top with crushed red pepper flakes, fresh chopped green onion, chopped peanuts or sesame seeds, and lime wedges for squeezing over the top.
