Make the Peanut Butter Sauce: In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, chili-garlic sauce, sesame oil, honey, lime juice, garlic, ginger, and water or stock until smooth. Adjust the consistency with more water or stock if needed.
Combine Noodles and Sauce: In a large bowl, add the cooked noodles and pour the peanut butter sauce over them. Toss until the noodles are well coated in the sauce.
Serve and Garnish: Divide the noodles into serving bowls. Top with crushed red pepper flakes, fresh chopped green onion, chopped peanuts or sesame seeds, and lime wedges for squeezing over the top.
