Take rubber washer out of pressure cooker. Cover bottom of pressure cooker with vegetable oil.
Cube chicken breast and season liberally with poultry seasoning.
Prepare shrimp and season liberally with Old Bay seasoning. While chicken and shrimp absorb flavors from seasoning, turn heat to medium high and cook smoked sausage.
Cook over medium high heat until sausage looks almost burnt (don't worry, chicken will deglaze browning of pan).
Put in chicken and stir around while cooking to deglaze pan.
Cook chicken until brown.
Put in seasoning blend, mushrooms, garlic, salt, pepper, parsley, and Cajun seasoning.
Stir while cooking to blend ingredients.
Simmer until liquid covers all ingredients.
Put in 1 beer, do not stir, pour it over and let cook until the yeast can not be smelled.
Put in shrimp, rice, and water, stir, and bring back to boil.
Cover with pressure cooker lid without rubber washer.
Turn heat down to medium low. LET SIMMER FOR 45 MINUTES WITHOUT LIFTING THE LID. (It's hard because it smells good, but if you lift the lid the rice will gum up)
After 45 minutes yell 'IT'S JAMBALAYA TIME YA'LL'
