In a large bowl mix the dry ingredients together.
Add the wet ingredients. Mix well until it form a dough.
Line a bread baking tin with parchment paper.
Add the dough and press it down as much as possible (use your hands or the back of a metal spoon).
Leave it in the fridge to chill for at least 30 minutes.
Melt the chocolate with the coconut oil on a double boiler or in the microwave.
Pour the chocolate evenly onto the set dough. Chill in the fridge for another 30 minutes to 1 hour.
Once the chocolate has set, remove the protein bar gently, sprinkle with some sea salt, and cut into equal slices.
Store in an air-tight container and enjoy throughout the week.
