Homemade Beef Summer Sausage
  1. Add everything to a large bowl (or stand mixer) and mix really well.

  2. Divide into 2 portions and shape into logs (about 6–7 inches long).

  3. Wrap tightly in plastic wrap (I double wrap).

  4. Refrigerate for 24 hours (don’t skip this step).

  5. Unwrap and place on a sheet pan.

  6. Bake at 275°F for 2 hours.

  7. Cool in the fridge, slice, and store.
