Eggcellent Country Potato Salad
  1. Wash potatoes, halving the larger and add to a pot of cold, salted water

  2. Bring to the boil, reduce to medium, and cook for 20 - 25 minutes or until fork tender but not soft

  3. Put aside to cool slightly, halving any whole potatoes

  4. Meanwhile, fry bacon until desired crispiness, set aside

  5. In a large bowl, mix mayo, mustard, pickles, onion, vinegar, and salt & pepper together until combined

  6. Gently stir in chopped eggs and bacon

  7. Add potatoes, carefully combine

  8. Adjust seasoning and chill for two hours minimum
