Wash potatoes, halving the larger and add to a pot of cold, salted water
Bring to the boil, reduce to medium, and cook for 20 - 25 minutes or until fork tender but not soft
Put aside to cool slightly, halving any whole potatoes
Meanwhile, fry bacon until desired crispiness, set aside
In a large bowl, mix mayo, mustard, pickles, onion, vinegar, and salt & pepper together until combined
Gently stir in chopped eggs and bacon
Add potatoes, carefully combine
Adjust seasoning and chill for two hours minimum
