Gradually add dry ingredients to wet mixture, stirring until just combined. Gently fold in diced apples.
Spoon batter into prepared muffin tin, filling each cup three-quarters full. Bake for 12-15 minutes or until a toothpick comes out clean.
While bites cool, whisk powdered sugar and apple cider until smooth. Dip each warm fritter bite into glaze, allowing excess to drip off. Let set on a cooling rack.
