Chocolate Chickpea Cookies
  1. Preheat oven to 175°C and line 1-2 trays

  2. Blend chickpeas, bananas, maple syrup, peanut butter and vanilla until smooth and creamy

  3. Transfer to a bowl and stir in almond meal, baking soda and salt

  4. Fold in half the chocolate

  5. Spoon into 9 portions on the tray and gently shape (it's a soft mix)

  6. Press remaining chocolate on top

  7. Bake for 20-22 minutes until set but still soft

  8. Leave to cool on the tray for ~20 minutes to firm up
