Pass the cottage cheese through a fine sieve into a large bowl. If the cottage cheese is too wet, place it first on cheesecloth and squeeze out the excess moisture.
Add the egg, vanilla sugar, salt, and 3 tbsp of rice flour. Mix into the dough using a fork. The dough should not be too stiff but should still hold its shape.
Sprinkle the table with a small amount of rice flour. Take one spoonful of the cheese dough and use your hands to form a ball. Then flatten both sides of the cheese pancake and use a glass to form it into a barrel shape. Add more rice flour if necessary.
Heat up a frying pan and add the coconut oil. Cook the cheese pancakes on both sides for about 3 minutes on medium heat.
Serve the syrniki with fresh berries, maple syrup, and crème fraîche.
