Finely chop the vegetables
Sauté the chopped vegetables in a drizzle of olive oil until they wilt
Add the chicken breast cubes and spices
Cover and let the chicken cook for 5-7 minutes on medium low heat
Crack the eggs on top and keep them sunny side up or scramble them
Cover and let the eggs cook to your preferred doneness
Drizzle with olive oil and sprinkle with black pepper
Serve with bread and tea
