Vegan Sunflower Seed Taco Meat
  1. Soak sunflower seeds in a bowl, covered with water overnight.

  2. Drain water. Put them into a food processor and pulse until you have meat like crumbles. *Be careful not to over process or you will end up with sunflower butter.

  3. Chop onions, garlic, and sun dried tomatoes very fine.

  4. Add oil to a skillet, and saute your onions until translucent (about 2-3 minutes).

  5. Add in the garlic for 1 more minute.

  6. Sprinkle the taco seasoning across and stir to combine.

  7. Add in sun-dried tomatoes. Cook for 1 more minute.

  8. Add in the crumbled sunflower seeds and stir very well.

  9. Pour in the no soy sauce (or substitute) and the lime juice. Stir well.

  10. Cook for another 4-5 minutes.

  11. Take off the stove and serve.
