Generously season your chicken thighs on both sides with salt and pepper
Heat a skillet over medium high
Once you skillet is hot, add your chicken thighs and cook, undisturbed for 5 minutes
Flip and cook for another 4 minutes
Remove from the skillet and set aside (at this point they are not cooked all the way through)
Reduce the heat to medium and add 1 tbsp of olive oil and your onion, cooking for 5 minutes
Add your garlic and cook for another 2-3 minutes
Add your spices, grainy dijon, and bone broth and bring to a simmer, stirring to loosen up any bits that have stuck to the bottom
Return your chicken thighs to the skillet and simmer for 7 minutes, occasionally basting the chicken in the sauce, while the sauce thickens
