Chicken Parmigiana
  1. Preheat oven to 375°F (190°C).

  2. Season chicken with salt and pepper. Dredge in flour, then egg, then breadcrumbs mixed with Parmesan.

  3. Heat olive oil in a skillet over medium heat. Brown chicken for 3-4 minutes on each side until golden. Drain on paper towels.

  4. Spread some marinara in a baking dish, add chicken, top with more marinara, basil leaves (if using), and mozzarella slices.

  5. Bake for 15 minutes, until cheese is melted. Broil for 2-3 minutes for extra crispiness (optional).

  6. Garnish with chopped basil or parsley. Serve with pasta or salad!
