Cook the sushi rice and mix with the plain skyr or Greek yogurt, sriracha or gochujang, salt, and garlic.
Assemble the burritos with the marinated chicken and creamy spicy rice, and any other desired toppings.
To reheat, remove from freezer, wrap in a paper towel, microwave for 2 mins, then air fry at 375 for 6-8 minutes to crisp up the tortilla, or pan fry.
