Classic Ragù Sauce
  1. Finely chop all the vegetables (onion, carrots, celery stalks, and garlic cloves). Keep them ready.

  2. Heat a generous splash of olive oil in your pot. Add veggies and sauté for 5-6 minutes.

  3. Add ground meat, break it apart with your whisk or spatula and cook until browned.

  4. Pour in the wine and let the alcohol evaporate. You'll smell when it's ready!

  5. Stir in tomato paste and canned tomatoes. Add a few ladles of broth. Cover partially and simmer for at least 2 hours, stirring every 20-30 mins. Add more broth if needed.

  6. After 2 hours (or when you say it is done), season with salt and pepper. Serve with pasta and top with parmesan.
