Cook orzo according to packet, drain & set aside
Mix through cream cheese while orzo is still hot, coating the pasta
Once orzo is coolish, add zest, pesto, red onion, and sundried tomatoes. Fold through carefully
Chop chicken and add to orzo with feta, spinach, lemon juice, and olive oil (for extra flavour, use the oil from the sundried tomatoes)
Salt & pepper to taste
Once happy with mix, add fresh cherry tomatoes and fold
Serve chilled
