Ricotta Croquettes
  1. In a food processor, blend the ricotta with the eggs, grated cheese, flour, and baking powder until smooth.

  2. Heat oil in a deep pan.

  3. Drop spoonfuls of the mixture into the hot oil and fry for about 90 seconds on each side, or until golden brown.

  4. Remove and drain on paper towels.

  5. Sprinkle with salt and serve hot.
