Jalapeño, Pepper Jack, And Bacon Corn Pudding

1 box (8.5 oz) Jiffy Corn Muffin Mix

1 stick (½ cup / 4 oz) unsalted butter, melted

2 large eggs, beaten

1 can (15 oz) whole kernel corn, drained

1 can (15 oz) cream-style sweet corn

1 cup full-fat sour cream

1–2 tbsp hot honey

½ tsp salt

½ tsp black pepper

1 lb bacon, cooked until crisp and crumbled

2 fresh jalapeños, seeded and finely diced

1 can (4 oz) mild green chiles

1½ to 2 cups shredded pepper jack cheese

Hot honey for finishing

Flaky salt for finishing

Extra bacon for topping

Chopped chives for garnish

Cook bacon until crisp and crumble, reserving some for topping
Seed and finely dice fresh jalapeños
Mix together melted butter, beaten eggs, drained whole kernel corn, cream-style corn, sour cream, and hot honey
Add Jiffy Corn Muffin Mix to the wet ingredients and stir to combine
Season with salt and black pepper to taste
Fold in crumbled bacon, diced jalapeños, green chiles, and shredded pepper jack cheese, reserving some cheese for topping
Pour mixture into a baking dish
Top with reserved pepper jack cheese and bacon
Bake according to Jiffy mix package directions until golden and set
Finish with hot honey, flaky salt, and chopped chives before serving
