Preheat oven to 350 degrees. Spray a 9 x 13 pan with non-stick spray.
In a large bowl, mix together mayonnaise, sour cream, 1 ½ tsp chili powder, garlic powder, salt, and 4 oz crumbled Queso Fresco.
Pour into the pan and spread evenly.
Sprinkle remaining ½ tsp chili powder on top of the corn. Bake for 35-40 minutes, or until bubbly around the edges.
Remove from the oven and top with remaining 2 oz crumbled Queso Fresco and sprinkle with chopped dried cilantro.
