Ingredients
Sauté aromatics: Heat olive oil in a medium pot over medium heat. Add diced onion and cook until soft and translucent, about 5 minutes.
Add mushrooms: Stir in the sliced mushrooms and cook until they’ve released their moisture and started to brown, another 5–7 minutes
Add garlic & pepperoni: Add minced garlic and chopped pepperoni. Cook 1–2 minutes, just until fragrant and the pepperoni begins to crisp slightly
Build the soup base: Pour in your marinara and broth. Stir well and bring to a simmer. Let it bubble gently for 10–15 minutes so the flavors meld.
Add cheese: Lower the heat and stir in mozzarella a handful at a time until melted and creamy.
Taste and season: Add oregano, basil, red pepper flakes, and salt/pepper to taste
