Preheat and prepare – Preheat oven to 165°C and grease and line an 8.5-inch loaf pan.
Melt the butter in a saucepan over medium heat until golden and nutty, then let it cool slightly.
Whisk the browned butter with white sugar and brown sugar until combined.
Mix in the eggs one at a time, then add vanilla, mashed bananas, and yogurt until smooth.
In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
Gently fold the dry ingredients into the wet mixture until just combined.
Fold in chocolate chunks, reserving some for topping if desired.
Pour batter into the pan and bake for 45–60 minutes until a toothpick inserted in the centre comes out clean.
Let cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely before slicing.
