Heat the olive oil in a pan over a low heat. Add the chicken, peppers and onion, then season with fajita seasoning and paprika. Cook until the chicken is cooked through.
Remove from the heat and set aside.
Cut each wrap in half. Sprinkle a little mozzarella onto each half, then top with the chicken mixture.
Fold the sides in to create a sealed pocket. Repeat with all wrap halves.
Melt the butter in the microwave, then stir through the parsley and garlic.
Brush an ovenproof dish with half of the butter and add the pockets. Brush over the remaining butter, sprinkle over the rest of the mozzarella and bake at 180°C for 15 minutes until golden and bubbly.
Leave to cool slightly, then enjoy.
