Chicken Sausage Tomato & Mascarpone Pasta

INGREDIENTS
• 2 servings
• 20 minutes
• 120g (uncooked weight) pasta
• 4 chicken sausages
• ½ onion
• Handful of spinach
• 2 tsp basil
• 200g passata
• 20g parmesan
• 40g mascarpone
• 100ml stock
• Salt & pepper
• 1 tsp parsley
• 1 tsp garlic puree
Boil the pasta and grill/air fry the chicken sausages.
Meanwhile, in a pan, fry off the diced onion with the garlic.
Once the onion has softened, pour in the stock and passata.
Stir through the mascarpone and the parmesan and let this simmer and thicken up.
Season with basil and stir through the sliced-up spinach.
Once the pasta is cooked, drain and add it into the sauce.
Slice up the sausages and add them into the sauce.
Season with salt, pepper, and parsley.
Serve up & enjoy!
