Apple + Cinnamon + Oven Pancake
  1. Preheat oven to 500F.

  2. Melt the butter or coconut oil in a cast iron skillet or 8x8 baking pan.

  3. While the butter is melting in the oven, peel and slice the apples.

  4. Add the sliced apples, cinnamon and sugar to the pan and stir until they are well coated.

  5. Bake for 10 – 15 min or until the apples soften and begin to brown.

  6. While the apples are baking, stir together the flour and salt. Set aside.

  7. Whisk together the milk, eggs, vanilla and maple syrup.

  8. Add the dry ingredients to the wet ingredients and stir well or blend.

  9. Once the apples are done, pour the batter over the apples and then reduce the oven temperature to 425F.

  10. Bake for about 10 min. You just want to check and make sure it has cooked through in the middle but remove it before the edges get too crispy. 10-12 minutes should do the trick.

  11. Let it cool for a few minutes and then lightly dust with powdered sugar for some extra pizzazz.

  12. You can eat it as is or drizzle with a little maple syrup.
