Almond Flour Cottage Cheese Tortillas
  1. In a blender or food processor, combine cottage cheese, eggs, almond flour, baking powder, and salt. Blend until smooth.

  2. Preheat a non-stick skillet or crepe pan over medium heat. Lightly grease with oil or butter if needed.

  3. Pour ¼ cup batter into the pan, spreading thinly into a 6-8 inch circle. Cook 2-3 minutes until edges lift and bottom is golden.

  4. Flip carefully with a spatula. Cook 1-2 more minutes until golden and flexible. Repeat with remaining batter.
