Granola Blondie Bar
  1. Grind oats in food processor till fine powder texture and pour into mixing bowl

  2. Grind chia seeds and cashews in food processor till fine powder and add to oats

  3. Add remaining cookie bottom ingredients and mix well until sticky dough-like consistency forms

  4. Press dough into parchment-lined baking sheet, flatten thin using rolling pin and parchment paper on top

  5. Process figs and apricots in food processor for a few minutes until chunky pieces form

  6. Mix dried fruits and granola topping ingredients in separate bowl

  7. Spread granola topping evenly over cookie bottom

  8. Bake at 400F for 15 minutes

  9. Cool completely, then refrigerate or freeze for 30 minutes before slicing into bars

  10. Store in ziplock bag in freezer
